RICOTTA CAKE 
1 pkg. yellow cake mix
2 lbs. Ricotta cheese
3/4 c. sugar
4 eggs, slightly beaten
1/4 tsp. vanilla

Grease and flour 9x13 pan. Mix cake mix according to package directions. Pour into pan. Mix Ricotta cheese, sugar, beaten eggs and vanilla together. Spread evenly over cake batter. DO NOT MIX INTO CAKE BATTER.

Bake 1 hour at 350 degrees or until toothpick comes out clean. Cut into small squares. Square can be put into small cupcake papers.

Note: Small chocolate chips, or chopped cherries can be added to cheese mixture.
