FETTUCINI ALFREDO 
8 oz. med.-wide noodles
Boiling salted water
6 tbsp. butter
1 1/2 c. whipping cream
1 c. (3 oz.) grated Parmesan cheese
Salt and pepper
Whole or ground nutmeg

Cook noodles in a large kettle of boiling salted water until al dente. Drain.

While noodles are cooking, melt butter in a wide frying pan over high heat until butter is lightly browned. Add 1/2 cup of the cream and boil rapidly until slightly thickened. R educe heat to medium. Add noodles to sauce and toss gently. Then add half the cheese and 1/2 cup of remaining cream. Repeat with remaining cheese and cream; toss again. Season with salt and pepper to taste and grate nutmeg generously over noodles (or use about 1/8 tsp. ground nutmeg). Serve immediately. 4 to 5 servings.
