FRUIT AND VEGGIE MOLDED SALAD 
2 (3 1/2 oz.) pkgs. lemon Jello
1/2 c. chopped celery
1 lg. carrot, chopped or shaved
1/2 c. raisins, rinsed
1/2 to 1 c. pineapple tidbits, unsweetened (drain off and save juice)

Prepare Jello according to directions on package, using pineapple juice instead of cold water. Refrigerate until slightly thickened. Add fruit and veggies, mix well. Pour into mold. Chill until firmly set. Unmold onto lettuce leaves when ready to serve.
