STUFFED MUSHROOMS 
1 lb. fresh mushrooms
1/2 lb. fresh sausage
6 tbsp. butter
1/4 c. onion, chopped
1/4 c. bell pepper, chopped
2 tsp. parsley
2 tsp. thyme
1 c. bread crumbs
3/4 c. Parmesan cheese
1/2 c. celery, chopped

Wash mushrooms and cut stems from caps. Chop stems and set aside. Scramble sausage and cook until done. Drain on towel. Melt butter in 8 or 10 inch skillet; cook onion, celery, and bell pepper until tender. Add stems. Cook 2 minutes more. Remove from heat and add spices, bread crumbs, Parmesan cheese and sausage. Stir until well mixed. Stuff each mushroom and place in shallow dish. Bake at 350 degrees for 10 to 15 minutes until hot. Do not overcook! Serve warm. Can freeze leftovers.
