FRESH WATER FISH VARIATIONS | |
These recipes can be made with bass, striped bass, bream, crappie or catfish filets. BASS SALAD (Or Other Fish) : Bring 2 quarts water to a boil with a bag of Crab Boil (spice packet). Add onions or other desired spices. When water and spices have boiled 15 to 20 minutes, turn off heat. Drop in filets of fish but DOT NOT BOIL. Poke them around in hot liquid until they turn white and will flake apart. Remove carefully with spatula, drain and chill. Use this fish and make a salad just as you would make tuna salad, except you will need to add a little oil (fresh water fish is not oily like tuna) and you may prefer some extra seasonings like Tony's Seafood Seasoning. Serve on crackers, or make a sandwich. BASS COCKTAIL: Use the same fish as above; chill. Make cocktail sauce and serve as a pre- dinner cocktail. Very much like crab. BASS PATTIES: Prepare filet as above; flake. Mix together with finely chopped onion, beaten egg, parsley flakes and cracker meal. Form into patties and pan fry in small amount of oil until lightly browned. You may prefer to coat the patties in cracker meal or cornmeal. FRESH WATER GUMBO: Prepare your favorite gumbo recipe to your taste. Just before serving, drop fresh water filets into pot. REMOVE FROM HEAT - DON'T COOK. Just move filets around until they turn white and flake apart. Much cheaper than seafood. |
