SPINACH QUICHE | |
2 (10 oz.) pkg. frozen spinach 3 eggs or egg substitute 6 oz. nonfat cottage or ricotta cheese 2 slices any bread 1/8 c. Parmesan cheese Preheat oven to 350 degrees. Spray or grease a 9-inch pie plate or pan. Thaw and drain spinach, beat in eggs, mix in cottage or ricotta cheese. Wet 2 slices of bread with water and squeeze out water. Break up and mix in. Add Parmesan cheese. Bake 40-45 minutes until edges brown and center is firm. Serve hot or cold. |
