SPINACH QUICHE 
2 lbs. Ricotta cheese
1/2 lb. Mozzarella cubed or shredded
3 eggs
1/2 c. grated cheese
Salt and pepper
2 (10 oz.) pkgs. frozen chopped spinach, thawed and drained
2 pie crusts (regular)

Put fork holes in pie crust. Brown pie crust at 400 degrees 10 minutes.

Mix Ricotta cheese, Mozzarella, and eggs. Add spinach, salt, pepper, and grated cheese; blend with fork. Pour into pie crust.

Bake at 375 degrees 45 minutes. Makes 2 regular pies.
