BLACK EYE PEA CHILI 
2 or 3 cans black eye peas, undrained
1 sm. can tomato sauce
1 c. bell pepper, chopped fine
1 c. onion, chopped fine
1 c. celery, chopped fine
2 tbsp. sugar
Bacon drippings or oil
Salt & pepper to taste

Saute bell pepper, onion and celery in bacon drippings or oil until tender. Add black eye peaks, sugar and tomato sauce. Salt and pepper to taste. Simmer a few minutes until completely hot.
