SPINACH AND AVOCADO SALAD 
1 bunch spinach, fresh
4 oz. mushrooms, fresh, sliced
1 sm. can mandarin orange segments
1 avocado, sliced
1/3 c. vegetable oil
3 tbsp. Balsamic vinegar
1 tsp. honey
1/4 tsp. celery salt
1/2 tsp. salt
1/8 tsp. pepper
4 slices bacon, cooked and crumbled

Wash and trim spinach. Tear into bite-size pieces and place in large salad bowl. Add mushrooms, orange segments, and avocado slices. In a smaller bowl, combine oil, vinegar, honey, and the 3 seasonings. Pour dressing over salad and toss lightly. Sprinkle with bacon bits and serve. Serves: 4. (Prep and Cooking Time: 20 minutes)
