SPINACH, AVOCADO & WALNUT SALAD 
1 lb. spinach, washed well
1/4 lb. lean ham
1 avocado
1 orange
1/2 c. walnut halves
Salt & pepper
2 tbsp. vinegar
1/4 c. olive oil
1 tsp. Dijon mustard

Tear spinach into bite-size pieces and place in salad bowl. Cut ham into strips, peel and slice avocado, peel and segment the orange. Arrange ham, avocado, orange segments and walnuts on the spinach. Combine vinegar, olive oil, mustard, salt and pepper in a jar. Cover, shake vigorously and pour over salad.
