ENCHILADA SQUARES 
2 lbs. ground beef
4 eggs
1 can evaporated milk
1 pkg. enchilada sauce mix
1 (8 oz.) can tomato paste
1/4 c. chopped onion
1/3 c. black olives
2 c. Fritos
1 c. cheddar cheese

In skillet cook beef and onion until onion is tender. Drain fat. Spread a layer of Fritos in casserole dish. Beat eggs, tomato paste, enchilada sauce mix and milk together. Mix with meat. Pour over Fritos. Top with olives and remaining Fritos. Bake 20-25 minutes at 350 degrees until set. Add grated cheese.
