ENCHILADAS 
12 tortillas
1/2 c. oil
1 can enchilada sauce
15 oz. can tomato sauce
1 1/2 lb. hamburger or chicken
1 c. grated cheese
1 onion
1 small can ripe olives
shredded lettuce
1 hard cooked egg
shredded cheese

Brown hamburger, drain. Fry tortillas lightly in hot oil. Dip into enchilada and tomato sauce (mixed together). Place meat, onions and olives on tortillas, sprinkle with cheese. Roll and place in oiled baking dish, seam side down. Pour remaining sauce on top.

Bake in 350°F oven until bubbly (about 15 to 20 minutes). Sprinkle with grated cheese and serve immediately. Garnish each enchilada with shredded lettuce and hard cooked egg, if desired.
