SPINACH SUPREME 
1 tsp. lemon juice
4 pkgs. (10 oz.) frozen chopped spinach
1/2 c. butter
1 pkg. (8 oz.) cream cheese (with chives if desired)
1 sm. onion, cut fine
1 can sliced water chestnuts
Salt and pepper to taste

Cook spinach slightly and drain. Add butter, cream cheese, onion, lemon juice and water chestnuts. Mix well. Put in casserole. Top with 1 cup of cracker crumbs and bake at 350 degrees for 30 minutes. Serves 8 to 10 people.
