SPINACH NUGGETS 
2 (10 oz.) pkgs. frozen chopped spinach
1 tbsp. minced dried onion
2 c. herb seasoned stuffing croutons
1 c. grated Parmesan cheese
2 beaten eggs
3 tbsp. melted butter

Cook spinach according to package directions. Drain. Combine spinach, croutons and cheese. Stir in eggs and butter. Shape into one inch balls. Place in shallow baking pan (grease pan). Bake at 375 degrees for 15-20 minutes.

Makes about 4 dozen balls. I usually double recipe. These are luscious, can't-just-eat-one appetizer. Works great reheated in microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
