SPINACH SALAD 
1/2 c. peanut oil
2 tbsp. red wine vinegar
2 tbsp. sugar
1 tsp. grated onion
1/4 tsp. dry mustard
1/2 tsp. salt
Spinach
Bacon bits
Cheddar cheese
Mushrooms
1 can water chestnuts
2 hard boiled eggs
Croutons

Blend peanut oil, red wine vinegar, sugar, onion, mustard and salt. Set aside. In large bowl, add washed spinach leaves, bacon bits, grated cheese, sliced mushrooms, sliced water chestnuts, 2 sliced hard boiled eggs. Drizzle dressing over to desired amount, toss salad gently, then sprinkle with croutons.
