ENRICHED WHITE BREAD 
2 pkgs. active dry yeast
2/3 c. warm water
6 c. enriched all purpose flour
3 tsp. salt
2 c. skim milk
1/4 c. safflower oil

Dissolve yeast in 2/3 cup warm water. Combine flour, salt, milk and oil in a large mixing bowl; add dissolved yeast. Mix with wooden spoon to form soft dough. Remove to floured surface. Knead 5 to 10 minutes or until dough is smooth and elastic.

Grease a glass mixing bowl with the safflower oil; place dough in bowl and turn to coat top. Cover, let rise in warm place 3 to 4 hours; then punch down.

Divide dough in half. Knead to form loaves. Put into 2 loaf pans (greased). Cover. Let rise in warm place 1 to 2 hours. Bake at 350 degrees for 35 to 40 minutes. Remove from pans. Cool on wire racks.

Yields 2 loaves. This can also be used for rolls. Let rise 1 to 2 hours. Bake at 350 degrees for 25 to 35 minutes.
