FRESH BROCCOLI WITH SOUR CREAM
SAUCE
 
1 1/2 - 2 lbs. fresh broccoli
1 tsp. salt
3/4 c. sour cream
1/4 c. mayonnaise
2 tsp. capers
1/8 tsp. pepper

Wash broccoli well; cut off tough ends and split, if large. Tie broccoli to serving sized bunches. Fill deep saucepan with water to half of the pan depth. Add salt; bring water to a boil. Place broccoli upright in saucepan. Cook for 5 minutes. Cover; cook for 10 minutes longer or until broccoli is crisp-tender. Drain. Combine sour cream, mayonnaise, capers and peppers; mix well. Serve over broccoli. Yield: 6 servings.
