CRABMEAT MORNAY 
1 stick butter
1/2 c. chopped parsley
1 pt. breakfast cream
1 tbsp. sherry wine
Salt & pepper to taste
1 lb. white crab meat
1 sm. bunch green onions, chopped
2 tbsp. flour
1/2 lb. grated Swiss cheese or less as desired

Crab meat (fresh preferred), boiled in seasoned water. Melt butter in heavy iron pot and saute onions and parsley. Blend in flour, cream and cheese until melted. Add other ingredients and gently fold in crab meat.
