CREAM CHEESE CUPCAKES 
2 (8 oz.) cream cheese, softened
3/4 c. sugar
2 eggs
1 tbsp. vanilla
1 tbsp. lemon juice
Vanilla wafers
Fruit topping or jam
Paper cupcake liners

Preheat oven to 375 degrees. Mix first five ingredients with mixer until smooth. Using muffin pan, put in liners. Place one vanilla wafer in the bottom of each. Fill each cup 1/2 to 3/4 full with cream cheese mixture.

Bake 20 minutes. Cool and top with fruit. Refrigerate before serving. Makes 2 dozen.
