POTATO CANDY 
1/2 c. mashed potatoes
1/2 cube butter (softened)
2 lbs. powdered sugar
Flavoring to taste (vanilla, almond or mint)

Stir potatoes and butter together, mix in remaining ingredients. Knead on board sprinkled with some of the powdered sugar.

For pin wheels: Roll out thin; spread lightly with butter, then peanut butter. Roll up and slice thin. Place on waxed paper and refrigerate.

Or: Roll into small balls and dip in melted chocolate.
