MACARONI SALAD 
4 lbs. macaroni
1 lb. green onions
2 lbs. green peppers
1 lb. sweet pickles
7 oz. pimento
8 stalks celery
2 lbs. American cheese
3 qts. mayonnaise
1 tbsp. salt
2 tsp. pepper
8 lbs. lettuce

Cook macaroni in boiling salted water 15 minutes. Chop onions, peppers, pickles, pimento and celery fine. Grate cheese course. Combine all ingredients with mayonnaise, salt and pepper. Serve 4 ounces on lettuce leaf. Yield 100 (4 ounce) portions.
