COCONUT CARROT CAKE 
2 c. brown sugar
1 1/2 c. oil (corn - sesame)
4 eggs, beaten
2 c. whole wheat flour
2 tsp. baking powder
1 tsp. salt
1 tbsp. cinnamon
1 c. chopped nuts
1 tsp. vanilla
1 c. grated coconut (fresh)
1/2 to 1/3 c. grated carrots

Mix sugar with oil and beaten egg. Blend flour with baking powder and salt. Combine dry and wet ingredients. Then fold in cinnamon, nuts, flavoring, coconut and carrots. Fill greased pan half full. Bake 1 hour at 350 degrees.
