GRILLED ZUCCHINI | |
Aluminum foil 4 sm. zucchini 1 med. onion, sliced 1/2 lb. mushrooms, sliced 1 sm. clove garlic, minced 1/2 tsp. salt Pepper 2 tbsp. butter Tear off an 18 inch square of heavy duty aluminum foil. Cut zucchini into 1/4 inch slices and place in center of foil. Add onions and mushrooms; sprinkle with garlic and seasonings; dot with butter. Bring 4 corners up together in a pyramid shape; fold opening together loosely to allow for heat circulation and expansion; seal by folding over ends and pressing to package. Grill over medium hot coals for 30 minutes or until tender. |
