PIMIENTO VEGETABLE SANDWICH SPREAD | |
1 cucumber, grated 1 green pepper, grated 1 sm. onion, grated 2 carrots, grated 2 oz. chopped pimiento 1 envelope unflavored gelatin 1 c mayonnaise Mix cucumber, green pepper, onion, carrots, and pimiento together. Drain, saving 3 tablespoons of juice. Add juice to gelatin, dissolve over warm water in double boiler. Mix gelatin liquid, mayonnaise, and vegetables together well. Let chill overnight before spreading on sandwiches. Yields: 1 1/4 cups spread. |
