SWEET POTATO ROLLS 
1 c. cooked mashed sweet potatoes
3 tbsp. butter
1 pkg. dry yeast
1/2 c. warm water
1 egg
1 tsp. salt
3 tbsp. sugar
5 c. flour
3/4 c. warm water

Combine sweet potatoes and melted butter. Dissolve yeast in warm water. Add egg, salt, sugar, and blend well. Add flour and 3/4 cup warm water to the potato mixture. Knead well. Grease with melted butter and cover. Let raise 2 hours. Roll out and cut into desired shapes. Place on greased baking sheet and let rise 1 hour. Bake at 425 degrees for 15-20 minutes. Makes about 30 rolls.
