BEEF CASSEROLE 
2 lbs. zucchini, sliced (about 2 qts.)
1 lb. lean ground beef
1 tsp. salt
1/4 tsp. each pepper and garlic powder
1 c. finely chopped onions
3 c. cooked rice
1 (4 oz.) can chopped green chiles
2 eggs, slightly beaten
1 1/2 c. cottage cheese
2 tbsp. grated Parmesan cheese
2 c. grated Cheddar cheese

Cover and cook zucchini in small amount of salted water about 5 minutes. Drain. Cook beef, seasonings, and onions until meat is no longer pink and onions are tender crisp. Combine with rice, green chilies, and zucchini. Blend eggs, cottage cheese, and Parmesan cheese. Stir in meat mixture. Turn into one large buttered baking dish (or two small ones). Top with grated Cheddar and bake at 350 degrees for 30 minutes. (If two dishes are used, freeze one and bake later.)
