SWEET POTATO CHIPS 
Vegetable oil for deep frying
3 lb. sweet potatoes or yams, peeled
1 tbsp. coarse (kosher) salt
1 tsp. paprika
1/8 tsp. cayenne pepper

In large saucepan, heat 2 inches oil to 325 degrees F. In food processor or by hand, slice potatoes 1/16 inch thick; fry in batches 3 minutes, until golden (allow oil to return to 325 degrees F. between batches). Drain. In bowl, mix seasonings; toss with warm chips.

Makes 16 servings. Per serving: 161 calories, 1 g. protein, 24 g. carbohydrate, 7 g. fat, 0 cholesterol, 407 mg. sodium.

This is very good start. My variation of this recipe is in the way of cooking, I double cook the chips. Sweet potatoes tend to go limp after frying. So the way to avoid this is to double fry. Cook chips sliced thin, once drain allow to cool and cook a second time. This creates a crunchy chip. Then the seasoning, I use smoked paprika, cayenne, brown sugar and bacon salt. Yumm...bacon .....
