GRANNY HELEN'S SWEET POTATO PIE | |
CRUST: 1/3 c. shortening 1/3 c. butter 2 c. pastry flour, sifted 1 tsp. salt FILLING: 6-8 sm. sweet potatoes, boiled until soft 1/2 c. butter 1 tsp. nutmeg 1 tsp. cinnamon 1 tsp. salt 1/3 c. all-purpose flour 1/3 c. sugar 1 egg 1/3 c. crushed pineapple (optional) 1/2 c. milk 1. Make crust by mixing shortening and butter with 2 knives, sifting in flour and salt; rolling dough into 9 inch pie plate. Set aside for 20-25 minutes. 2. Blend potatoes with other filling ingredients. Pour filling into pie shell. Bake 30 minutes in 400 degree oven. Let pie set 20 minutes before slicing. |
