CREAMY CHICKEN PIE | |
partially baked pie crust 3 tbsp. butter 1/2 c. chopped onion 3 c. sliced mushrooms 3 tbsp. unbleached white flour 1 c. low-fat cottage cheese 2 c. diced, cooked chicken or turkey breast 1/3 c. chopped parsley 1/4 tsp. ground pepper 1/4 tsp. rosemary Prepare dough for crust and line bottom of pie pan. Reserve rest of dough to make a lattice top for pie. Bake for 5 to 10 minutes and remove from oven. preheat oven to 375 degrees. In large skillet, melt butter over medium heat. Cook onion and mushrooms until most of liquid has evaporated. Stir in flour and cook until bubbly; remove skillet from heat. Stir in chicken, cottage cheese, parsley, pepper and rosemary. Spoon into partially baked pie crust. Roll out remaining dough and cut into strips to make lattice top. Bake for 45 minutes or until crust is golden brown. |
