APPLE OR PEACH COFFEE CAKE 
Preheat oven to 425 degrees. Grease 8 inch pan and cover bottom with 2 cups sliced fruit. Sprinkle with 2/3 cup sugar (white or brown), cinnamon, nutmeg, grated rind and juice of 1 lemon. Dredge with 1 tablespoon flour. Pour over surface 2 tablespoons melted butter.

BATTER:

1 c. flour
1/2 c. sugar
1 tsp. baking powder
1/4 tsp. salt

2 egg yolks
1 tbsp. butter
1/4 c. milk

Beat. Cover fruit with batter. Bake 30 minutes. Reserve on plate. Cool.
