OAT BRAN MUFFINS 
1 c. whole wheat flour
1 c. oat bran
1/4 c. sugar
1 tsp. baking powder
1/2 tsp. salt
3/4 tsp. baking soda
1 tsp. cinnamon
1 c. skim milk or apple juice
1 egg
2 tbsp. canola oil
1 c. pureed or mashed fruit
1/2 c. raisins (optional)

Sift together flour, oat bran and next 5 ingredients. Set aside. Mix milk or juice, egg, oil and vanilla. Stir wet mixture into dry mixture until all are moist. Add fruit and raisins. Spoon into a muffin pan which has been lightly oiled. Bake at 350 degrees for about 20 minutes.

Fruit suggestions: Bananas, peaches, apples or applesauce, peaches, blueberries or zucchini.
