BANANA BRAN MUFFINS | |
1 lg. egg 3/4 c. packed light brown sugar 1 1/3 c. mashed ripe bananas 1/2 c. raisins or walnuts 1/3 c. vegetable oil 1 tsp. vanilla extract 3/4 c. all-purpose flour 3/4 c. whole wheat flour 1/2 c. oat bran or miller's bran 2 tsp. baking powder 1/2 tsp. baking soda 1 tsp. cinnamon 1/4 tsp. salt Heat oven to 375 degrees. Grease muffin cups. Beat egg and sugar in medium size bowl. When smooth, add bananas, raisins, oil and vanilla. Let stand 1 minute. Thoroughly mix flour, bran, baking powder, baking soda, cinnamon and salt in a large bowl. Fold banana mixture into flour mixture until dry ingredients are moistened. Drop batter into muffin cups. Bake 15-25 minutes or until brown and springy to touch in center of muffin. Turn out onto a rack to cool. Serve warm. Makes 12 regular sized muffins. |
