OAT BRAN RAISIN COOKIES 
1 c. oat bran
1 1/4 c. whole wheat flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 c. sugar
1/2 c. shortening
4 egg whites, beaten frothy
1/4 c. milk
1 c. raisins
1/2 c. chopped nuts (optional)

Preheat oven to 350 degrees. Combine oat bran, whole wheat flour, baking soda, cinnamon and salt in large mixing bowl and stir to mix. Cream together the sugar and shortening. Mix in the egg whites and milk. Add the creamed mixture to dry ingredients and mix well. stir in raisins and nuts.

Spoon batter (1 teaspoon per cookie) onto lightly greased cookie sheet and bake for 10 to 12 minutes. NOTE: Try these with other chopped, dried fruits added - dates, apricots, peaches, etc.
