FRENCH SOUP OF BEANS AND CABBAGE 
1 c. dried white beans, soaked overnight
1 lb. potatoes, peeled & cubed
2 (14 1/2 oz.) cans tomatoes
6 cloves garlic, cut thin
3 c. shredded cabbage
Salt & pepper to taste

Place ingredients in 3 cups water in large pot. Cover and simmer for 1 1/2 hours, or until beans are tender. Keep liquid constant by adding water as it evaporates.
