SOUTHERN STYLE BUTTERSCOTCH
BROWNIES
 
3/4 c. sifted flour
1 tsp. baking powder
1/2 tsp. salt
1/4 c. butter
3/4 c. firmly packed light brown sugar
2 eggs
1 tsp. vanilla
1/2 c. chopped walnuts
Coconut topping

Combine dry ingredients (except sugar). Melt butter; stir in brown sugar. Beat in eggs and vanilla. Stir in flour mixture and walnuts until combined. Pour into 8-inch square greased pan. Bake at 350 degrees for 30 minutes or until top springs back. Remove from oven; raise temperature to broil (550 degrees).

Prepare coconut topping and spread evenly on warm cookies. Place pan with tops 3 inches from broiler; broil for 3 minutes or until sugar is melted and top is light brown. Cut into squares.

COCONUT TOPPING:

Combine 1/4 cup butter, 1/2 cup firmly packed light brown sugar and 1 cup shredded coconut. Sinfully rich!
