GINGER CAKE 
3/4 c. shortening
3 eggs
2 c. + 2 tsp. flour
1 1/2 tsp. ginger
3/4 tsp. baking soda
1/2 c. brown sugar
3/4 c. molasses
1 1/2 tsp. cinnamon
1 1/2 tsp. baking powder
3/4 tsp. salt
3/4 c. boiling water

Cream shortening, sugar and eggs thoroughly; add molasses and mix well. Spoon flour into dry measuring cup. Blend dry ingredients together well. Add dry mixture into creamed sugar mixture; mix well. Stir in boiling water. Pour into prepared 9-inch square pan. Bake at 350 degrees for 40-45 minutes.
