SQUASH PUFF | |
3 c. mashed cooked winter squash 1/2 c. chopped onion 2 tbsp. butter 2 eggs, beaten 1/4 c. light cream or Half and Half 3 tbsp. all-purpose flour 1 tsp. baking powder 3/4 tsp. salt Dash pepper 1/3 c. buttered bread crumbs Cook squash; mash. Saute onions in butter until transparent. Add to squash. Beat in eggs and cream, then stir in flour, baking powder, salt and pepper. Turn into greased 1 1/2 quart baking dish and top with crumbs. Bake at 375 degrees for 25 minutes or until lightly browned. |
