PEPPER STEAK 
1 lb. beef chuck or round steak, sliced in thin strips
1/4 c. oil
1 tsp. garlic salt
1 tbsp. soy sauce
1/2 tsp. ginger
1 tsp. salt
1/4 c. water
1 c. green pepper, cut in strips
1 c. onion, diced
1/2 c. celery, diced
1 tbsp. cornstarch
1 c. water
1 can tomatoes

Brown beef in hot oil. Add garlic and cook slightly. Add soy sauce, ginger, salt and 1/4 cup water, and cook 45 minutes. Add vegetables (peppers, onion and celery) and cook 10 minutes longer. Stir in cornstarch, which has been blended with 1 cup water. Add tomatoes and cook 5 minutes longer. Serve over rice.
