BEEF CASSEROLE | |
1 1/2 lbs. lean ground beef 2 tbsp. butter 3 lg. onions, chopped 3 green peppers, chopped 1 can (#2) canned tomatoes, chopped 1 can (#2) creamed corn 1 tbsp. salt 2 tbsp. chili powder 1 (8 oz.) pkg. egg noodles 1 lb. sharp cheddar cheese, shredded Cook ground beef in butter until meat turns white. Add onions and peppers and cook until slightly browned. Add tomatoes, corn, salt and chili powder. Cover and simmer for 45 minutes. Cook noodles according to package directions; drain and combine with meat mixture. Stir in shredded cheese and spoon mixture into 2 or more baking dishes. Bake, covered at 350 degrees for 45 minutes. The extra casseroles may be cooled, wrapped and frozen for later use. Take from freezer and let defrost before baking. Bake as the first casserole, but a little longer if still a little icy. Serves 9 or 10. |
