ROAST TURKEY 
10 lb. turkey (or what will serve best for the meal planned)
1/2 c. brown sugar
2 cloves garlic, minced
1/8 tsp. salt
1/8 tsp. basil
1 can orange juice, frozen
2 c. water

Preheat oven to 350 degrees. Unwrap turkey and allow it to thaw in the refrigerator, if it was purchased frozen.

Wash turkey completely inside and outside and pat dry. Allow it to drain while preparing seasoning.

In a small bowl, put sugar and minced garlic. Add salt and basil. Mix together well and rub over the turkey.

Place a trivet or rack in roasting pan and put in turkey. Add water and juice and cover with lid or loosely cover with foil. Put pan in the oven to bake but remove turkey to baste it with liquid in the pan from time to time. Bake for 1 1/2 hours.

To serve, place turkey on a platter and thicken pan juice with a little cornstarch for gravy.

Try this method one time.. The day BEFORE you are going to roast the bird, remove all wrappings (Heavens, a naked turkey!!) and place the bird in the 'fridge overnight (Still naked) in a pan or roaster bottom.

The skin dries a bit so it produces a nicely crispy finish, and a great color.

I rub mine w/butter, salt, garlic powder, and poultry seasonings about 30 mins. prior to baking to allow bird to "warm up" just a bit.
