1 3/4 c. flour 3 tsp. baking powder 1/2 tsp. salt 1 1/2 tbsp. sugar 2 eggs, beaten 1 1/2 c. milk 2 tsp. melted shortening 2 1/2 c. corn, cut off cob or 2 c., drained corn Sift flour, add baking powder, salt, and sugar. Combine eggs, milk, shortening. Add to flour mixture, stir until smooth. Add corn. Drop by tablespoons into deep hot grease (365-375 degrees). Fry until browned on both sides. Drain on paper towels. Sprinkle powdered sugar on. This batter can be used for vegetable, fruit, or ham. |
