MICROWAVE PEACH BUTTER | |
2 (16 oz.) cans peach halves, drained 3 tbsp. powdered fruit pectin 3/4 tsp. cinnamon 1/4 tsp. allspice 2 1/4 c. sugar Puree in blender or food processor. In 2 quart microwave - safe bowl. Combine pureed peaches, powdered pectin, cinnamon and allspice. Mix well. Microwave on high for 6 minutes or until mixture is very hot, stirring every 2 minutes. Add sugar; mix well. Microwave on high for 5-6 minutes or until rolling boil, stirring once. Microwave on high an additional 1 minute. Ladle onto 4 clean, hot 8 ounce jelly jars or moisture - vaporproof freezer containers leaving 1/2 inch headspace. Cool several hours. Store in refrigerator up to 3 weeks or freezer for 3 months. 1 tablespoon = 30 calories. |
