MORNING GLORY MUFFINS 
2 c. flour
1 1/4 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1 1/2 c. fine shredded carrot or zucchini
1 1/2 c. shredded apple
3/4 c. coconut
3 beaten eggs
1 c. oil
1/2 tsp. vanilla
Optional:
1/2 c. raisins
1/2 c. nuts

Mix together. Put in greased muffin cups. Bake at 375 degrees for 18 minutes. Serve with butter or cream cheese.
