BREAD PUDDING WITH STRAWBERRY
SAUCE
 
Butter flavored Pam
2 (8 oz.) loaves Italian bread
4 c. skim or 1% milk
1/2 c. packed light brown sugar
2 tsp. vanilla
1 1/2 c. frozen egg substitute, thawed or 3-4 eggs
1/4 c. seedless raisins; optional
1 tsp. cinnamon
2 c. strawberries
1/4 c. sugar

Preheat oven to 325 degrees. Spray 12 x 8 inch dish with Pam. Cut bread into chunks. In large bowl, with whisk or fork, beat milk, brown sugar, and vanilla and eggs until well blended. Add bread chunks and raisins. Toss to coat. Let soak 10 minutes, stirring occasionally. Spoon mixture into baking dish. Evenly sprinkle cinnamon. Bake 1 hour or when knife inserted comes out clean. Blend strawberries and sugar in blender. Serve over warm pudding. Makes 12 servings.
