BLACK BEANS AND RICE 
In a heavy 2 quart saucepan brown and crumble 2 or 3 strips of bacon - if needed, add a little oil and saute:

1/2 c. chopped onion
1/2 green pepper, chopped
2 cloves garlic, minced

Add 1 can of black beans and stir. Add 2 cups water.

To this mixture add the following:

1/2 tsp. cominos (ground cumin)
1/2 tsp. oregano
1 bay leaf
1 tbsp. salt
Pepper to taste

Bring water to boil and add:

2 c. rice

Lower heat (very low) and cook until rice is tender (20-30 minutes). Pour about 1/4 cup olive oil over rice and stir. (Serve with pork.)

I use M-P brand or Kirby.
