BLACK BEANS AND RICE 
1 (12 oz.) pkg. dried black peas
2 med. green bell peppers
1 lg. onion
1 (8 oz.) can tomato sauce
2 lg. cloves garlic
2 tbsp. sugar
1/3 c. vinegar
1 tsp. ground cumin (may add more to taste)
1 tsp. ground oregano (may add more to taste)
1/3 c. olive oil
Salt to taste

Place dried black beans in pressure cooker, fill pressure cooker 3/4 full water. Cook beans 20 minutes. While beans cook puree 1 bell pepper, onion and garlic.

In saucepan add olive oil and puree mixture saute then add tomato sauce, cumin and oregano to saute mixture, cook on medium heat until beans ready. After beans, cooked 20 minutes remove from heat. Cool cooker then add saute mixture, vinegar, sugar, salt to beans, cut 1 bell pepper into 2 large pieces and place in beans. Cook beans 20 minutes more in pressure cooker. Pour beans over white rice and serve.
