CHICKEN A'LA VEGETABLES 
1/4 c. olive oil
1 c. onions, sliced thin
5 garlic cloves, minced
2 lbs. boneless chicken, cut into cubes
1 c. chicken broth
2 c. fresh broccoli flowerets
1 1/2 c. fresh tomato wedges
1/4 tsp. salt
1/4 tsp. pepper
Spiral noodles, cooked
Parmesan cheese

In a large fry pan, saute onions and garlic in oil until tender. Add the chicken and saute 3 to 5 minutes. Add the broth, cover, and cook on low heat, about 45 minutes. Add the broccoli and cook until tender. Add the tomatoes and cook 2 minutes more. Serve with spiral noodles and sprinkle with Parmesan cheese. Yield: 6 servings.
