CREAMY POTATO SALAD IN
CORNUCOPIA
 
4 c. diced cooked potatoes (4 med. size)
1/2 c. diced celery
3 tbsp. minced onion
1 c. sour cream (or mayonnaise)
1/2 c. French dressing
2 tbsp. vinegar
1/4 tsp. salt
1/2 tsp. caraway seed (optional)
6 slices bologna, lunch meat or ham
2 hard cooked eggs

Mix potatoes, celery, onion and eggs. Combine sour cream, vinegar, French dressing and salt and caraway seed. Fold into potatoes. Place a portion of salad on each slice of meat. Overlap meat to make a cone, secure with toothpick if necessary.
