SPANISH CASSEROLE 
Mix and chill:

2 tomatoes, chopped
1 med. green pepper, chopped
1/2 head lettuce, shredded
1 med. onion, chopped
3 c. Cheddar cheese, shred and chill
2 lbs. ground chuck or lean turkey
1 (11 oz.) pkg. Fritos
1 lg. can (27 oz.) kidney beans
2 tbsp. butter
1 (15 oz.) can tomato sauce
1 (20 oz.) can enchilada sauce
1/2 tsp. sugar

Mix sauces and sugar, simmer over low heat. Put beans in another pan and add butter, simmer to thicken. Brown meat, preheat oven to 300 degrees. Place 13 x 9 inch casserole dish in oven to heat. When hot, add Fritos and heat them. Drain meat, spread over Fritos, sprinkle 1/2 of cheese over meat. Spread beans over cheese, pour sauce over beans. Spread chilled vegetables over and sprinkle with rest of cheese. Serve with picante, guacamole, sour cream and ripe olives.
