SNACK ATTACK MUFFINS 
1 can mashed cooked sweet potatoes or 1 (17 oz.) can sweet potatoes in syrup, drained
1/3 c. unsulfured molasses
1/2 c. skim milk
1/2 c. safflower oil or butter, melted
1 lg. egg
1 c. whole wheat flour
1/3 c. oat bran
2 tsp. baking powder
1 1/4 tsp. ground cinnamon
1/4 tsp. grated nutmeg
1/4 c. raisins
1/4 c. chopped walnuts
1/2 tsp. salt

Lightly grease or line a 12 cup muffin pan. Using a fork beat sweet potatoes, molasses, milk, butter, and egg until smooth; set aside. In another large bowl, combine whole wheat flour and remaining ingredients. Mix with potato-molasses ingredients, just until blended. Spoon batter into pan. Bake 25-30 minutes at 350 degrees.
